Keylime Pie

Bestie's recipe for keylime pie.

Keylime Pie

Ingredients:
1 Graham cracker crust
1.5 Tbs keylime zest, divided
3 egg yolks
1-14 oz. can sweetened condensed milk
3/4 cup keylime juice (~1 lb keylimes)

Whipped cream
1 cup heavy whipping cream
1.5 Tbs sugar

Instructions:
1. Pre-hest oven to 350F.
2. Whip 1 Tbs zest and egg yolks for 2 minutes, until thickened.
3. Add sweetened condensed milk and whip for 3 minutes, until thickened.
4. Add keylime juice and mix until well combined.
5. Pour mixture into pie crust and bake for 15 minutes.
6. Cool pie at room temperature for 30 minutes.
7. In the meantime, whip together heavy whipping cream and sugar. Decorate pie with whipped cream, remaining keylime zest, and sliced keylimes.
8. Refrigerate pie for 2 hours before serving.

Chipotle Sweet Potato and Carrot Soup

This soup is easy and delicious. Reminds me very much of French cooking. Simple ingredients; a hearty winter soup!


Chipotle Sweet Potato and Carrot Soup

serves 4

Ingredients:
3 Tbs. olive oil
1 cup yellow onion, finely chopped
2 ribs celery, chopped
2-3 cloves garlic, minced
1/2 tsp. dried thyme
1/2 cup white wine
1-2 tsp. chipotle powder
1 quart vegetable or poultry broth
1.5 lbs sweet potatoes, cut into 1" cubes
1/2 lb carrots, cut into 1" segments
1/2 cup whole milk
salt and pepper to taste

Instructions:
1. Heat a large, heavy soup pot over medium heat. Add olive oil.
2. Add onion, celery, garlic, and thyme. Cook for 10 minutes until soft, stirring frequently.
3. Add wine and chipotle powder. Cook until wine is reduced and alcohol smell dissipates.
4. Add broth, sweet potatoes, carrots, and some salt and pepper. Bring to a boil, then reduce to a simmer for 25 minutes or until the vegetables are soft.
5. Blend soup until pureed smooth.
6. Combine pureed soup with milk in the pot and heat thoroughly. Season to taste with salt and pepper.
Optional: garnish with plain yogurt and cilantro
