Fruit Cobbler ("1" recipe)
Family recipe from one of my aunts. It is called the "the 1 recipe" because all the measurements are just one of that thing and it is easy to memorize. Enjoy!
Fruit Cobbler ("1" recipe)
Ingredients:
1 cup flour
1 cup sugar
1 tsp baking powder
1 generous pinch salt
1 stick butter, melted
1 egg
1 jar fruit, drained OR 1.5 cup fresh fruit, chopped + 1 Tbs. corn starch
cinnamon, for dusting (optional)
vanilla ice cream, for serving (optional)
Instructions:
1. Preheat oven to 350F.
2. In a 8"x8" baking dish, place layer of fruit at the bottom. Sprinkle over corn starch if using fresh fruit.
3. In a medium bowl, add flour, sugar, baking powder, and salt. Combine well.
4. Add melted butter and whisked egg, and mix until just combined. It will be a paste-like consistency.
5. Spread batter evenly over the fruit layer. Sprinkle cinnamon on top, if using.
4. Bake for 1 hour (or 40 minutes if using convection fan).
