Pistachio Grape Cheese appetizers
So easy and soooo delicious. Don't make these too far ahead of time because the pistachios will get soft and lose their crunch. Had these at the Truman Library members night and decided to try and recreate this recipe. I think they used goat cheese but the recipe I found used Boursin. I want to try it both ways eventually!
Pistachio Grape Cheese appetizers

makes 20-30 balls
Ingredients:
1 package Boursin (5.2 oz) or another spreadable cheese
6 oz. shelled pistachio, roasted and salted
30 large, seedless grapes
Instructions:
1. Chop up the pistachios on a large cutting board.
2. Rinse and dry grapes.
3. Take a little bit of cheese and just cover the grape. Roll between your palms and then roll in the chopped pistachios to cover. Set on the side and repeat until all the cheese is used up.
